No matter how you slice it, perfect pizza isn’t created from a recipe. It comes from the heart. It’s an attitude. For third generation pizza makers – it’s in our blood. Our nonna (grandma), came over from Italy with no money and created what became one of the country’s most celebrated pizza markets! Nonna always told us a tender, yet crunchy crust is the foundation of pizza. If the crust is “in zuppato” (soggy), fuhgetta ’bout it! A slice needs to hold its own; and always fold in before eating it. The freshest ingredients are the layers that top the foundation. No exceptions. It’s not rocket science. It’s not science at all. Pizza is an art. Nonna’s pizza making traditions are alive and well in us – and so are her famous pasta recipes, which we cook up daily.
